Happy Groundhog Day!
All though it isn't one of the major holidays, there is a lot to love about Groundhog
Day.  What isn't there to love about a day in which a furry little rodent pops out of
the ground and prognosticates the weather based on his shadow?

In our family, we have a few Groundhog Day traditions that we observe every
year. Make groundhog day special this year, by borrowing some of our fun
activities or use our ideas to come up with some of your own.  No matter how you
celebrate Groundhog Day, remember that whether or not the little guy sees his
shadow, the winter will end and springs lovely are just around the corner.

Groundhog Cookies

These cookies have become our annual Groundhog Day
Dessert.  If you don't have a groundhog shaped cookie cutter,
you can make a paper stencil of a groundhog and cut these
cookies out with a knife.

INGREDIENTS
2 cups sifted flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground ginger
1 teaspoon ground cloves
1 1/2 teaspoons cinnamon
1/2 cup soft butter
1 cup sugar
1/2 cup molasses
1 egg yolk
1 egg, slightly beaten


Sift together first seven ingredients. Set aside. Cream butter and
sugar until fluffy. Blend in molasses and yolk. Stir in flour mixture
and mix well. Form into a ball.

Wrap in plastic wrap. Chill overnight.

Place small amounts of dough on a sheet of plastic wrap, and
cover with plastic wrap. Roll 1/8 inch thick. Cut out cookies with
lightly floured groundhog shaped cookie cutter.

Place cookies on greased baking sheet. Brush with slightly
beaten egg. Repeat until all dough is used.

Bake 8 to 10 minutes in a preheated 350-degree oven. Cool
slightly before removing from cookie sheet.

Serve your Groundhog cookies on a slab of vanilla ice cream.
Use Chocolate sauce to draw a shadow on the ice cream, next to
the groundhog cookie.
