Easy Cheesy Potato Soup

This soup is one of my family’s favorite meals. It cooks up in about a half an hour, but
they think I slaved over it all day!

2 Cans of Chicken Broth
1 Can of Evaporated Milk
1 Onion Diced
3 Cloves of Garlic, Minced
1 TBSP Garlic Powder
2 Cups of Frozen Shredded Potatoes
1 Cup of Cheese
½ Cup of Sour Cream
Salt, Pepper, and Garlic Salt to Taste

In a large pot, bring chicken broth and milk to a boil.  Reduce heat and add onion,
garlic, garlic powder, and frozen potatoes to your liquid.  Simmer over low heat for
twenty-five minutes.  Stir in sour cream and cheese and cook until the cheese is
melted.  Season to taste before serving.

Makes 4 servings.

Make Your Own Baby Food!
Homemade Rice Cereal

¼ cup brown rice
1 cup water
breast milk or formula

Place whole grain rice in a blender or food
processor and blend on high for two
minutes until the rice forms a powder.  Boil
one cup of water.  Slowly add rice
powder, stirring constantly.  Turn heat
down to low and simmer, still stirring
constantly for 10 minutes.  You can adjust
the thickness by adding breast milk or
formula, until it is the consistency your
baby likes.
Makes 3-4 servings.  Refrigerate extra
portions for up to 3 days.

Let’s face it, food is expensive.  If you are like me, you do everything you can to save money at the grocery store.  I clip coupons, watch
for sales, and stock up on bulk items.  All of these are great ways to enforce a budget, but if the food I buy at the grocery store never
makes it to the table, I have wasted money rather than saving it.

How you store your food can increase its shelf life and give your budget the extra stretch it needs when times are tough.  Always place your
vegetables and fruits in separate compartments in your refrigerator and never store your onions and potatoes in the same basket or bin.  
Gasses that are naturally emitted from fruits can accelerate the ripening or spoiling of certain vegetables.

It is also important to make sure that your refrigerator and freezer are set at the correct temperature.  There is nothing more unappetizing
than shards of ice in your ice cream or a watery center in an ice cube.  The temperature in your refrigerator should be set at no more than
40 degrees and your freezer does best when it is set around 0.

As nice as it is to have a full frig, remember to never over stuff your refrigerator. To keep food fresh and safe, cold air must be able to
circulate around it at all times.  

Remember these tips, the next time you are putting the groceries away and you will get a lot more mileage from the food you buy!

Lori Ann’s Easy Salsa

2 Cans Stewed Tomatoes
1 Can Diced Tomatoes
1 Can Diced Tomatoes with Green Chilies
2 tsp garlic salt
½ a Bunch Fresh Cilantro, chopped
1 large yellow onion (quartered)
1 Small Can Jalapenos
Juice from 1 lime

Place all ingredients in a blender or food processor and blend to a chunky consistency.
This makes up a good sized batch, but it keeps well, covered in the refrigerator.  Serve it
with tortilla chips or on scrambled eggs.  Use it to spice up a baked potato or spoon it
over boneless, skinless chicken breasts before you bake them.
