Lori Ann's Super Sugar Cookies

INGREDIENTS:
1 1/2 cups of Butter, softened
3/4 cups of Shortening
2 cups of Sugar
4 Eggs
1 teaspoon Real Vanilla Extract
5 cups of  All-purpose Flour
2 teaspoons Baking powder
1 teaspoon Salt

INSTRUCTIONS:

Cream butter, shortening and sugar until they are very smooth. Slowly beat in eggs and vanilla. Stir in dry
ingredients and mix thoroughly. Cover and chill  overnight.

Preheat oven to 400º. Roll dough on floured surface until it is 1/2 an inch thick.. Cut into shapes using a
knife or cookie cutter and place 1inch  apart on ungreased or parchment covered cookie sheet.
Bake 8 minutes. Cool completely on wire racks.  Wait at least 3 hours before you add icing.

Lori Ann's Incredible Icing

1 cup sifted powdered sugar
2 teaspoons milk
2 teaspoons light corn syrup
food coloring -- optional

Place sugar and milk in bowl and stir well. Add corn syrup and stir until it is completely combined.  At this
point you can add food coloring until you have the color of icing that you desire.  Ice your cookies and make
sure to add any decorations or candy before the icing sets. The icing will dry to a shiny finish.

Lori Ann's Magnificent Macaroons

Ingredients
4 Egg Whites
1 1/3 Cups Sugar
½ TSP salt
1½ TSP Vanilla
1 TSP Almond Extract
2½ Cups Sweetened Flaked Coconut
¼ Cup + 2 TBSP Flour
12 oz Milk Chocolate, Broken Up


Directions
In a heavy saucepan stir together the egg whites, sugar, salt, vanilla, almond extract, and coconut. Sift in
the flour, and stir until mixed well. Cook over medium heat, stirring constantly, for 5 minutes, increase the
heat and cook, stirring constantly, for 3 to 5 minutes more, until it is thickened and begins to pull away
from the bottom and side of the pan. Transfer the mixture to a bowl, cover with plastic wrap and chill it until
it is just cold. Drop heaping teaspoons of the dough 2 inches apart onto greased baking sheets.  Bake the
cookies in the middle of the oven at 300 for 20 minutes, or until they are pale golden. Transfer the
macaroons to a rack and let them cool. Melt the chocolate, stirring until it is smooth.  Dip the bottom of
each cookie, into the chocolate, coating it halfway up. Place on wax paper and drizzle melted chocolate on
top of each cookie.  Chill for an hour until chocolate sets.

Makes 30 cookies.
Candy Cookies

Ingredients
2 Cups Sugar
3 TBSP Cocoa
½ Cup Milk
¼ Cup Butter
3 Cups Oats
1 TSP Vanilla Extract
½ Cup Peanut Butter  

Directions

Bring to a boil sugar, cocoa, milk and butter. Cook 1 minute.
Remove from heat and quickly add oats, peanut butter, and vanilla.
Drop by teaspoonful on waxed paper. Let stand 1/2 hour until cool.
Strawberries-N-Cream Fudge

Ingredients
¾ Cup of  Butter
3 Cups of Sugar
2/3 Cup of Evaporated Milk
1 Small Box of Strawberry Flavored Gelatin
1 Bag of  White Chocolate Chips
1 Jar of  Marshmallow Cream
1 TSP Vanilla


Directions
In a large bowl, combine marshmallow cream and white chocolate chips. Set aside.
Mix butter, sugar, evaporated milk and gelatin powder in a large saucepan. Bring to full boil stirring
constantly. Continue boiling the strawberry mixture for 5 minutes over medium heat, stirring constantly to
prevent scorching. Remove from heat. Pour into the bowl containing the marshmallow cream and white
chocolate chips. Mix until chips and marshmallow cream is melted and creamy. Add vanilla and mix well.
Pour into a 9x13 glass dish that has been sprayed with non-stick cooking spray. Cool to room
temperature. Cut into squares.

Makes 3 pounds.
